Like any suffisticated and complex food, there is an art to tasting chocolate. Done right you can enjoy the full spectrum of the chocolate experience. So, here is how you do it:
People keep asking me about caffeine in chocolate. For some reason, there is an urban legend about chocolate having large amount of caffeine in it.
We just received the results from Brunswick Laboratory (the nationaly accepted reference for ORAC testing). As it turns out we were right. Processing our chocolate with our patent pending process maintains the high antioxidant value of the cocoa. Measured in trolox per 100 grams of Healthy Chocolate, the ORAC value is 85,067. To remind you, the USDA ORAC value for regular dark chocolate is 20,816. Yes, our chocolate is more than 4 times more potent.
What is an antioxidant?
An antioxidant is a chemical that take the place of an oxidant atom in a molecule. Some chemicals are "starved” for oxygen. These are called Free Radicals. When such chemical enters the body, it can start a chain reaction that destroys and mutates cells. Free radicals are believed to be a major cause for cancer and other diseases. When a body is attacked by a large number of free radicals it is under oxidative stress.
